Ingredients 

1/2 cup oil

1/4 cup jamaican rum

1 cup shadon benni

4 1/2 tbsp salt

1tbsp rosemary chopped

10 lbs turkey (whole)

 

METHOD

Pre heat oven to 325 degrees f

In a small bowl mix together shadon benni, garlic, rosemary, salt, oil, Jamaican rum and crack pepper

Pull skin and massage the seasoning mixture on the turkey flesh without tearing the skin 

Rub remaining seasoning mixture inside the cavity 

Rub the skin with a sprinkle of oil, salt and black pepper

Place on a greased baking tray 

Cover with foil and put into the oven

Bake for 2 hours and 15 minuets 

Remove foil and cook till golden brown
